Curried Cauliflower & Sweet Potato GEM® Bowl

With Christmas just around the corner and lots of indulgent festive recipes to look forward to, I like to keep my plates full of colourful and vibrant vegetables and lately I have been loving this Curried Cauliflower & Sweet Potato Bowl with the most gorgeous and my favourite GEM® avocados! Have you guys tried them? I can’t even begin to tell you how obsessed I am with them! GEM® Avocados not only are larger than regular avocados, they are also sweeter with a much buttery and rich consistency. They are available exclusively from Tesco and come ripe and ready to eat. 

I have used GEM® avocado to bling up my bowl by adding a delicious creaminess and lots of skin loving vitamin E, a powerful antioxidants that keeps skin cells strong and hydrated. 

It’s a super quick and easy recipe, perfect for thus busy time of the year, check it out below: 

Serve 2

Ingredients: 

1 sweet potato – chopped into cubes 

1 red bell pepper – sliced 

1/2 head of cauliflower – cut into florets 

1 tbsp of curry powder 

1 tsp of smoked paprika 

1/2 tsp of turmeric powder 

A drizzle of olive oil for roasting 

Salt and pepper to taste 

For the coconut yogurt dressing: 

4 tbsp of plain coconut yogurt 

1 garlic clove – crushed into a paste 

The juice of 1/2 lemon 

A handful of fresh coriander – finely chopped 

Salt and pepper to taste

Serve with: 

1 GEM® avocado – sliced 

Around 100g of cooked quinoa 

Handfuls of greens of your choice (i have used kale)

A sprinkle of pomegranate seeds 

A sprinkle of sesame seeds 

Add the sweet potato cubes to a large baking tray and drizzle with olive oil, the curry powder, smoked paprika, turmeric, salt and pepper. Mix well and roast in the oven at 180 degrees Celsius for 20 minutes. Remove the tray from the oven and add in the cauliflower and pepper, toss everything together and place it back in the oven for the final 15-20 minutes until all the vegetables are cooked. 

In the meantime make the dressing, simply mix everything together until smooth. 

Remove the tray from the oven an serve the roasted vegetable with the cooked quinoa, greens of your choice, GEM® avocado, pomegranate seeds, sesame seeds and the coconut dressing. Mix everything together and enjoy!
