This Granola couldn’t be easier or quicker! It’s super speedy and yet so delicious like traditional oven baked granola! Perfect for those day when you want to treat yourself to an extra special breakfast.

Ingredients:

Serves 2

1/2 cup of oats

1/3 cup of nuts of your choice ( I have used walnuts)

2 tbsp of pumpkin seeds or sunflower seeds 

1/3 cup of coconut chips 

A small handful of raisin or dried mulberries 

1 tsp of cinnamon 

A pinch of sea salt 

1-2 tbsp of maple syrup ( depending on how sweet you like it)

Serve with: fruit of your choice, plant milk or yogurt 

Add the oats to a non stick pan. Toast the oats on a medium heat for 5 minutes. Add in the nuts & seeds and toast them for 2-3 minutes. Make sure to keep stirring to prevent from burning. Add in the cinnamon, sea salt, coconut chips and maple syrup and cook for a final 2-3 minutes. Keep stirring as the coconut chips can burn quite easily. Remove from the stove and serve with fruit of your choice and plant milk!
