
I have been obsessed with one post pasta recipes! They are the ultimate fast food and they only require one pan! This one might as well be my favourite, I love the addition of salty olives and capers, perfect with the fresh seasonal tomatoes!
Ingredients:
Serves 2-3
Around 200gr of spaghetti – I have use spelt
250gr of cherry tomatoes – cut in halves
1 onion – finely sliced
2 cloves of garlic – finely sliced
Around 80 gr of pitted olives – sliced
2 tbsp of drained capers
1 red chilli – finely sliced
1/2 cup of cooked lentils
A generous handful of chopped parsley + extra to sprinkle on top
A glug of extra virgin olive oil
Salt & pepper to taste
4 cups of water for cooking
Add all in the ingredients to a very large pan. Drizzle the olive oil and pour over the water.Turn the heat on and simmer for 10-12 mins, tossing the spaghetti through the liquid every so often until it is cooked and the sauce is reduced and clinging to it. Add a splash more hot water if the sauce is too thick or does not cover the pasta while it cooks.
By the end you should have a luscious creamy sauce. Sprinkle with some black pepper, extra fresh parsley and enjoy!
