Ingredients:

Serves 2 

1 cup of frozen peas 

A generous handful of basil leaves 

2 tbsp of pine nuts 

2 garlic cloves

2 tbsp of nutritional yeast 

The juice of 1/2 lemon 

A generous glug of extra virgin olive oil 

Salt & pepper to taste 

An handful of baby spinach to add at the end

Pasta of your choice 

Cook the peas by simply let them soak I boiling water for few minutes. Cook the pasta of your choice according to the packet instructions. In the meantime make the pesto. Simply place the peas, basil, pine nuts, garlic, nutritional yeast, lemon juice, oil, salt & pepper into a food processor and blitz until creamy and smooth. 

Drain the pasta reserving 2 tablespoons of the cooking water. Place the pasta back into the pan, add the pesto, baby spinach, some extra frozen peas (optional), the cooking water and mix everything really well until it’s all combined and the spinach wilt. Served immediately and enjoy!
