ngredients:

Serves 1

 200g spaghetti or tagliatelle

 150g cherry tomatoes -halved

 2 garlic cloves – finely sliced 

2 tbsp of extra virgin olive oil 

1/2 onion – finely chopped 

1 red chilli – finely sliced 

A generous bunch of parsley or basil 

Salt & pepper to taste 

500ml of water 

Add all in the ingredients to a very large pan. Drizzle the olive oil and pour over the water.Turn the heat on and simmer for 10-12 mins, tossing the spaghetti through the liquid every so often until it is cooked and the sauce is reduced and clinging to it. Add a splash more hot water if the sauce is too thick or does not cover the pasta while it cooks. 

By the end you should have a luscious creamy sauce. Sprinkle with some black pepper, extra fresh herbs and maybe some vegan cheese!

    I didn’t get the creamy sauce but a quite runny one… maybe because I used whole wheat pasta?
